I know it's not in English, but bear with me here until I can make a full translation.
The numbers on the bottom are the levels of stones being used, the numbers on the left are the percentages of success rate.
This graphic clearly shows that the difference between gold item level and level of stone is capped at +30 levels, making it 80% of success. You can also see the progression that every 5 levels added approx 10% chance.
theres also a test on impact of supplements:
This graph shows the success rate of enchantments using level 80 stones on a level 55 eternal Abyss grade item. The bottom is without supplements, above that is with lesser supplements, above that using supplements, above that using greater supplements.
using level 80 stone on 55 eternal grade abyss item gives approx 50% chance after 1000 tries without supplements, and 65% with greater supplements.
on 55 eternal item, a lvl 80 stone gives a 70% chance without supplements and ~85% with greater supplements.
What all of this means:
Using an enchantment stone on an eternal grade item that is the same level as the item has a 20% chance to succeed.
There is a cap on enchanting items with a stone that is 30 levels above the item itself. using a level 85 stone an a level 50 item will have no more benefit than using a level 80 stone.
Abyss grade items are roughly 20% less likely to successfully be enchanted with the same materials as a non abyss grade item.
For every level you increase the enchantment stone over the item's level, you add roughly a 2% increased chance to succeed, with a maximum increase of 60% by using a stone 30 levels higher than the item.
Lesser supplements add a 5% chance to succeed in enchanting an item
Supplements add a 10% chance to succeed in enchanting an item
Greater supplements add a 15% chance to succeed in enchanting an item
Results of /roll testing on manastone socketing

The initial results seem promising, I will continue to update this top post with new data as it is recorded. Please post your results with as much information as possible so we can develop some accurate information here.
Results after using /roll to get 5 rolls in a row under 50 before attempting to socket:
